Siete Leguas Anejo, made from 100 percent blue agave and aged in oak until it picks up a soft golden color. The distillery has been at this since 1952, and it shows in the balance of cooked agave, light vanilla and gentle spice. Pour it neat in a small glass and give it a minute to open up. A solid pick if you want an anejo that still tastes like agave rather than just barrel.
