The classic Pastis de Marseille, made with star anise and licorice at 45 percent alcohol. Pour a measure over ice and top with about five parts cold water to watch it turn cloudy and pale gold. It is the standard summer aperitif in the south of France and it keeps well on the shelf between pours. The 750ml bottle handles a table full of guests.
