A Dominican rum from Santiago de los Caballeros, barrel aged and infused with hot peppers you can see floating in the bottle. At 40% ABV the heat builds slowly behind the caramel and oak, so it sips neat but really shines in a spicy daiquiri or a rum old fashioned. The squat glass bottle with its cork top looks good on the back bar long after the last pour.
