In the glass
This is Castellare's flagship red, a Sangioveto and Malvasia Nera blend grown in Castellina in Chianti and aged in French oak. The 2019 is classic Tuscany: dark cherry, dried herbs, leather and a firm, polished finish that rewards a decant or another five to ten years in the cellar. Each vintage carries a different endangered Italian bird on the label, here the Averla Piccola. Pour it with a bistecca, braised short ribs, or aged pecorino.
